Recipe of the Month: Peanut Butter Banana Muffins

Here’s a twist to your typical banana bread with chocolate chips. This recipe incorporates the sweet and nutty flavor of the often forgotten peanut butter chips. There are even recipes online to make your own PB chips if you want to create an even more homemade muffin! This recipe is great to make spur of the moment because most people have these items easily on hand.
Ingredients
2/3 c packed brown sugar
¼ c oil
1 egg, beaten
1 ½ c mashed bananas (about 4 medium)
1 ½ c whole wheat pastry flour (or ¾ C wheat flour and ¾ C white flour)
1 ½ t baking powder
½ t baking soda
¾+ c peanut butter chips
Instructions
1. Beat egg lightly, stir in brown sugar, oil, and bananas. Blend well.
2. Mix together flour, baking powder, baking soda, and PB chips.
3. Gently fold in dry and wet ingredients until moist. Fill muffin cups ¾ full.
4. Bake 20-25 minutes at 350°F.
