Recipe of the Month: Apricot BBQ Sauce
If April showers bring May flowers, we’re also hoping they bring May sunshine and a few warm nights to grill out. Looking for a twist on traditional BBQ? Try out our apricot BBQ sauce on pulled pork or chicken kebabs.
Yield: 3 cups
¾ cup dried apricots
1 ½ cups ketchup
3 Tbsp. cider vinegar
2 ¼ tsp. Worcestershire sauce
2 ¼ tsp. tamari
½ cup brown sugar
3 Tbsp. coarse grain mustard
1 ½ tsp. chili powder
¼ tsp. cayenne pepper
½ small onion
1 clove garlic, minced
½ tsp. canola oil
¼ lemon, peel and all
Simmer entire mixture until apricots have softened, at least one hour. Remove lemon, and purée sauce with blender until desired consistency is reached.
