Recipe of the Month: Rhubarb Apple Crisp

I think the apple’s rotten right to the core… but only in Charli XCX’s song ‘Apple’. The apples we use for recipes are fresh from the orchard, crisp, and ready to be eaten!

Of course there has to be a recipe with apples for this Recipe of the Month. Here’s a simple little mixture of your typically seen basic apple crisp and strawberry-rhubarb pie. I suggest using your own home-grown apples and rhubarb if possible. 

Ingredients

½ c brown sugar
6 T arrowroot powder (or 3 T corn starch)
3 c rhubarb - diced
3 c apples - chopped 
1 T lemon juice
1 c oatmeal 
⅓ - ½ c brown sugar
½ c melted butter
⅓ c flour (or almond milk leavings if you make your own nut milk!)
1 t cinnamon

Instructions

  1. Preheat oven to 350° F. 

  2. Mix sugar and arrowroot together.  Add fruit and mix in a large bowl. 

  3. Mix oatmeal, brown sugar, melted butter, flour, and cinnamon in a separate bowl.

  4. Put fruit mixture in a greased 8x8 baking dish, sprinkle oat mixture on top.

  5. Bake for 45 minutes. Let cool and enjoy. Perhaps with some vanilla ice cream!
