Recipe of the Month: Baked Feta Pasta (TikTok Pasta)

This recipe is a great addition to your usual meal rotation. Maybe you’ve even seen it before back in 2020 on TikTok? I originally saw this meal go viral and back when everyone was in quarantine, and what else was there to do but try it out for myself!
From the basic original recipe I’ve made a couple different iterations to find what I think is the best combination of additional ingredients. So feel free to play around with the veggies to fit your taste!
Ingredients:
1 bunch broccolini (ends trimmed) or broccoli (stalks cut close to florets)
1 yellow bell pepper (thinly sliced)
1 pint cherry tomatoes
½ large red onion (sliced into thin crescents)
1 lemon (½ cut into thin rounds for the sheet pan, and the remaining ½ for pressing juice)
5 T olive oil
1 t ground cumin
½ t red-pepper flakes
1 t salt (optional)
2 8 oz. blocks of feta
16 oz. pasta of choice (or rice or orzo)
Fresh thyme or oregano (optional)
Instructions:
Heat the oven to 400° F.
Prep all your vegetables. Wash and trim ends of broccolini, or cut broccoli stalks close to florets, thinly slice yellow bell peppers and red onion, and slice thin rounds of ½ lemon.
In a glass baking dish, combine the prepped broccolini (or broccoli), bell peppers, tomatoes, onion and lemon slices with the olive oil and toss to fully coat. Add the cumin and red-pepper flakes and toss again until evenly coated.
Add the feta blocks into the vegetables. Roast in the oven for roughly 20 minutes.
Cook pasta.
Once veggies are pulled from the oven, break up the creamy feta and mix in with the vegetables, adding a scoop of pasta water. Serve over pasta noodles or orzo or rice. Squeeze lemon and add fresh herbs on top.
